Recipe of the week. Boureki.

Boureki



Boureki is a simple and delicious summer dish and can be eaten hot or cold. I learnt this particular recipe from an elderly lady who lived in the village of Souri. Some recipes suggest a pastry topping for the boureki, I prefer this topping as it cooks almost like a crumble.

Ingredients
Potatoes and courgettes cut into thin rounds
Any soft cheese - can be a mixture of cheeses. I generally use Mizithra.

Salt , pepper (and mint) mixed in with the cheese.

Method
Layer potato, courgette and cheese alternately into a baking tin, finishing with a layer of cheese.

Sprinkle flour and sesame seeds on the top, and drizzle with oil.


Put into oven at 200'C uncovered for one hour, or until it meets the toothpick test. i.e the potatoes are cooked through.
