Twelfth Night Rocky road

Christmas isn't over till 12th night so we still have a couple of days to indulge ourselves before tackling any healthy New Year Resolutions!

Here is my favourite "Rocky Road" recipe. Most of the ingredients you can find locally produced such as glace cherries from Rethymnon, local walnuts, Chocolate produced on the mainland etc. The only thing you may have difficulty with if you live on Crete is the marshmallows!

  • 250g dark chocolate
  • 150g milk chocolate
  • 175g soft unsalted butter
  • 4 x 15ml tablespoons golden syrup (or glucose syrup if you cannot find Golden syrup here in Greece)
  • 200g Digestive biscuits
  • 150g roughly chopped walnuts
  • 150g red glacĂ© cherries
  • 125g mini marshmallows ( or chop ordinary ones)

  • Chop both sorts of chocolate small, or use chocolate buttons made for melting, and then put into a heavy-based pan to melt with the butter and syrup over a gentle heat.

Put the biscuits into a plastic bag bag and bash them with a rolling pin to get big- and little-sized crumbs

Take the pan off the heat, and add the crushed biscuits and nuts, whole glacĂ© cherries and mini marshmallows.

Turn carefully to coat well with the chocolate.

Tip into a foil tray or line a rectangular cake tin with greaseproof paper, smooth out

Refrigerate until firm enough to cut,  block of rocky road out of the  tray ready to cut.

Cut into squares or rectangles of the size you want

Refrigerate in a box till eaten
    These also freeze  well
