Liver stifado

Lamb's Liver Stifado




Chop and clean liver, put in a bowl with salt and pepper
2 Med onions - chopped
2 cloves garlic; 
bay leaf; 
2-3 cloves; 4 
All Spice; 
salt and pepper to taste
2-3 chopped tomatoes ( or a tin of chopped tomatoes if out of season) 
vinegar
a glass of wine
a little dried orange peel 





Fry liver first with a little oregano. Stir to brown all over. 
Add vinegar and wine
Then add onions and spices
Add tomatoes (and a spoonful of puree for a richer sauce if required)
When the liquid is boiling, turn heat down.

Simmer with lid on for 45 minutes.


Serve with rice, potatoes or macaroni




You can add potato, carrot, mushrooms or any other vegetable you like (add these with the tomatoes and check if a little extra liquid is needed as it cooks)- and if you like your food spicy, try adding a little chopped chilli or a dash of tabasco.
