Three ways with courgettes


Every summer there seems to be a glut of courgettes. There are just as many recipes too!
Here are three simple ones to try


Courgette fritters


Courgette Fritters 
140gr plain flour
5 spring onions (or equivalent ordinary)
250 chopped Feta
3 eggs
A handful of chopped mint
750gr chopped courgettes pre-prepared and left to drain.

Mix dry ingredients with a pinch of salt and pepper and a teaspoon of Paprika.
Add beaten eggs
Then add courgettes. The mixture should seem dry at first but will moisten with courgette juice.

Fry in sunflower oil a few at a time. Use 1 dessertspoonful per fritter and flatten slightly in the pan.
Fry a few seconds each side then drain on kitchen paper before serving.

Stuff with Feta or mizithra, dip in batter and fry
