Raspberry tart "a la Rosie"

This is a quick and easy store cupboard staple. You can use any soft fruit you have, fresh or frozen.

I adapted this from a recipe on a favourite blog of mine "Rosie Londoner"



We can't all have her lifestyle, but we can enjoy her recipes!

This is very simple, just using items you have in your cupboard or freezer, and is very quick!


I used
One half sheet of frozen puff pastry
One 300g pack frozen raspberries
Two dessertspoons plain flour
Two dessertspoons sugar
Milk or egg to wash pastry

Mix the fruit, flour and most of the sugar together till well coated. Place in the centre of the pastry. Fold the edges of the pastry. Wash with milk or egg. Sprinkle with a little more sugar if you like. Bake at 180c until pastry is golden. Serve hot or cold.
You can use any soft fruit you have, fresh or frozen and alter quantities to make a bigger tart. The flour and fruit juice make a lovely sauce in the tart



Serve with Cream or Ice-cream
