A tasty and colourful lunch or party dish
- Experiment! Use whatever is around and in season. Alter quantities, Make it yours!
Puff pastry - shop bought is fine
Cherry tomatoes - If you can find multicoloured ones all the better
Soft cheese - Goats cheese is good. I used a mix of cubed Feta and Mozzarella
Hard cheese, grated - I used Cretan Graviera but any tasty cheese will do.
Olives - whole or sliced - pitted
Peppers red, yellow and green
1 fresh chilli de seeded and finely chopped
Sundried tomatoes chopped (the ones in oil are best as they are softer)
Pesto - or you could try tapenade or sun dried tomato paste
Fresh Figs if available
Pomegranate seeds
Kiwi fruit sliced
Preheat oven to 180 fan, gas 6
Roll out your pastry onto a baking sheet and cover with Pesto (or alternative)
Bake for approx 10 mins until pastry begins to brown
Half the cherry tomatoes and tumble on to the pastry.
Cube or crumble the soft cheese and spread over
Add the chili and chopped sun dried tomatoes
Add the coloured peppers, sliced
cut the figs into quarters - or 6ths if they are large
sprinkle with the grated cheese (not too much it is not a pizza!)
Season with salt and pepper
Bake for another 6-10 minutes depending on your oven
Before serving sprinkle with the olives, pomegranate seeds and basil leaves.
Slice the kiwi fruit and decorate the tart
Serve hot or cold
